Neal 2007 Cabernet Sauvignon, Napa Valley

Good things come to those that wait.
One of my favorite things to do is to taste how a wine evolves over time. Be it buying futures from barrels and then tasting it in the bottle a few years later, all the way to watching it evolve over the course of years, to the simple popping the cork and then tasting the wine a day or two later to see how it "opened" or "dissolves" in those few days of exposure to the elements. In this case the wine evolved from a burly Cab with chewy tannins that masked everything else, to something deep, dark and integrated. It's amazing the difference that 24hrs makes. The following are my tasting notes, day 1 and day 2, from the 2007 Neal Vineyards Napa Valley Cabernet Sauvignon.
